Caramel Flan ( Using whipped cream)



Enriching your normal flan taste with whipped cream.Although this flan adds up more fat,it ensures to deliver such delicously unforgetable taste.This recipe has been approximately measured to suit the 7 inches cake pan.

INGREDIENTS:
For the flan
- 9 large eggs
- 2 1/2 cup milk
- 1 1/2 cup whipped cream ( i used ultra-pasteurized one)
- 1 1/3 cup sugar
- 2 teaspoon vanilla extract
- yellow color (optional)

For the caramel syrup
-1/2 cup sugar
- 2-3 teaspoon water
- few drops of lemon juice

PREPARATION:
For the caramel syrup
-Cook ½ cup of the sugar over medium heat in a small saucepan, stirring almost constantly with a long-handled wooden spoon, until it is melted and turns first golden and then little dark brown

- Immediately add in water and lemon juice, stir until dissolve
- Pour the caramel into the cake pan and swril the pan until it coats the bottom.(For the proper color,i pour in the silver mini cake tin)

- The caramel will harden at this point and melt again later as the flan bakes.

For the flan:
- Preheat the oven to 310F
- Dissove whipped cream,sugar and milk in small pot until the mixture gets warm.
- Whisk eggs and vanilla in 30s until the eggs are totally dissolved and leaves some bubbles.Don't overbeat the eggs,otherwise then flan will raise when it bakes

- Add in 2-3 drops yellow food color and tapioca starch(As the whipped cream will reduce the yellowness of the flan, the flan will stay in it color by adding few drops of yellow.I also add in 1tsp of tapioca in case the flan cracks when taken out of the pan)

- Pour in the milk mixture and stir gently

-strain for the smoother texture
- Pour the flan mixture into 7 inch cake pan
- Place the flan cake pan in a larger cake pan filled with half of water

- Bake for 45' or until the flan doesn't stick to the toothpick when inserted.
- Leave to completely cool,take out and serve
*Note: in my country, the flan is usually served cold with some coffee,coconut cream and crushed ice on top.

it said in the "preparation part" already. 350 Fahrenheit or 180 Celsius.

I thought this was a really cool recipe for flan. I prefer my own, as it is much more simple and involves no food coloring... which I thought was odd. Either way, great recipe.

1 or 2 drops of food color doesn't affect the quality of the flan at all.Just want to get the eye attraction and high quality photos taken.Normally, I don't put it in.Anyway,thanks for your thoughtful opinion.
