Although i dislike eating cheesecake, i still love 2 have some experiments. As my uncle and aunty love it so much-they said it goes so well with green tea,also the cheesecake in store is too sweety 2 taste-hey asked me to try making some. This is the second cheesecake i made after the first one named "Traditional NewYork Cheesecake".The combination of sour lemon with the cheesy taste will bring to your mouth an absolutely new aromatic flavor......
---I made this one long time ago.At that time,I wasn't attempt to post it anywhere so i didn't take picutre of the inside.INGREDIENTS:
FOR THE CRUST:
- 225g Graham cracker crumb or finely crushed biscuits
- 3 Tbsp. butter or margarine, melted
- 3 Tbsp. sugar
+++ These ingredients are for 7" springform pan. As i had no time, i bought the in-store crust so it had the shape look like the one in the picture.
FOR THE FILLING:
- 28 oz. Cream Cheese, softened
- 5 eggs, divided
- 1 cup sugar
- 4.5 Tbsp. flour
- 2 Tbsp. grated lemon peel
- 3 Tbsp. lemon juice -can add some more for desirable taste
- 1 tsp. vanilla
FOR THE DECORATION
- 3/4 cup sugar
- 2 Tbsp. cornstarch
- 1/4 cup lemon juice
- 1/2 cup water
- 1-2 drops of yellow color
PREPARATION
FOR THE CRUST:
-Preheat oven to 325°F if using a silver springform pan (or to 300°F if using a dark nonstick springform pan). Mix crumbs, 3 Tbsp. sugar and the butter; press firmly onto bottom of pan. Bake 10 min.
FOR THE FILLING:
-Beat cream cheese, 1 cup sugar, the flour, lemon peel, 2 Tbsp. lemon juice and the vanilla in large bowl with electric mixer on medium speed until well blended.
-Add eggs, one at a time, mixing on low speed after each addition JUST until blended. Pour over crust.
- Bake 50 to 55 min. or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan.
- Refrigerate 4 hours or overnight.
FOR THE DECORATION:
- Mix sugar and cornstarch in medium saucepan
- Gradually stir in water and juice until well blended. Adding in yellow color.Bring just to boil on medium heat.
- Cook and stir until clear and thickened.
- Pour over the crust and let it chill
- Top with whipped cream, cherry and apple slices
