Vietnamese baked comb cake( Bánh bò nướng)
INGREDIENTS:
- 200ml thick coconut milk
- 150g sugar
- 6 eggs
- 200gr tapioca starch
- 1 pack of Alsa baking powder/ 2 1/2 tsp single baking powder
- 5-6 drops pandan paste or vanilla
PREPARATION:
- Preheat the oven at 350F or 180C
- In small sauce pan, dissolve coconut milk, sugar and pandan paste/vanilla at medium heat( or microwave the mixture for approx 1 minutes)
- Leave to completely cool
- Mix together tapioca starch and baking powder
- Lightly beat the egg in large bowl( or just give it a quick stir)
- Pour in coconut milk mixture and stir well
- Gradually add in tapioca starch and quickly beat until just dissolve. The batter should have a thin layer of bubbles floating on top
- Remember to strain the batter, "comb" would not appear if the batter is not strained
- Bake the cake for 30-45 minutes until toothpick inserted and comes out clean.
- And this is the reason why we call it "Comb cake"...very unique name =))
I came across your site while browsing random sites and I just LOVE your food/recipes blog! I've been baking for a long time but I always make American desserts (I'm Vietnamese). It never occurred to me to try and make Vietnamese cakes, etc. 'cause I usually just buy them. Your site w/ pictures make it so clear so I tried the "baked cassava cake" the other day, and the "baked comb cake" last night. It was really fun! My mom was surprised I could make "baked comb cake," saying that her friend knows how to make it but won't show her how to make it. (So selfish!) Thanks so much! Maybe if I come across a Vietnamese dessert that I'd like to make, I'll ask if you have the recipe (if it's not already posted). You're great! :)

ReplyDeleteStrain the batter means pouring all the green liquid through a strainer(utensil with small holes in it).You can see the picture of the strainer in my "crab soup" recipe.Hope it helps =)

ESTEE, I don't have a scale to scale the ingredient, would you translate the ingredients from gram to cup?

This recipe yields 1 cake. Since you don't have the scale, how about trying to make 2 cakes without measuring the ingredients?

12 eggs

Hi, I'm so glad to found your site as I have been looking for recipes on how to make some of the cakes. I have tried making this "banh bo nuong" but it always fall flat after cooling out of the oven. It rises very nicely in the oven. Please tell me what I did wrong? Thank you.
ReplyDeleteHi Estee, I'm so glad to find the recipes on your site of some of my favorite cakes. I tried making this "banh bo nuong" but somehow I must have done something wrong during the process. The cake rises beautiful in the oven but after it sit and cool, it fell flat.
